I think it would be easier to restore than a wasp.
Parts seem easier to find.
But you would have to think about leaving the seat covers lol

Seriously, one of the reasons I wanted a LUV (before I bought my 5 'last cars') was that Phils Rotaries in QLD seems to have endless NOS and/or repro parts for these (well, the earlier 4-headlight LUV, but still)... rebuilding one would be a piece of the proverbial compared to sourcing badges and parts that literally don't exist!
